I don’t know about you, but I always seem to end up with those last few bananas that are ripening faster than we can eat them. This is the PERFECT answer. Honestly, I keep experimenting with banana bread recipes and, in using ingredients I had on hand, came up with a recipe I may stick with forever. It is that good.
This banana bread is moist, flavorful, and delicious enough for any time of day. The aroma of a sweet banana bread baking early in the morning will definitely get your mouth watering. It’s a perfect side in the afternoon with a little coffee or tea, as an after lunch snack, or even AS your lunch. 😉 If you’re craving a somewhat healthy yet kind of sweet snack after dinner, here you go.
Super easy to make, even on rushed days with little kids. Waiting for it to come out of the oven is the longest (and hardest) part!
Best Banana Bread
Recipe makes 1 loaf
Ingredients
1 cup granulated sugar
1 stick salted butter, room temperature
2 large eggs
4 ripe bananas
1 Tbsp light cream
1 tsp ground cinnamon
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Instructions
Preheat the oven to 325 degrees F. Butter a 9x5x3 inch loaf pan.
Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs, beating well.
In a smaller bowl mash the bananas with fork. Mix in the cream and cinnamon. Combine with the creamed butter and sugar and stir till combined.
In another bowl, mix together the flour, baking powder, baking soda, and salt and add this to the creamed mixture, mixing just till the flour disappears.
Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean.
Set aside to cool on a rack for 15 min, invert onto rack and cool completely before slicing.
